Lime-Chili Rubbed Steak

steaakWell today is a state holiday here (Pioneer Day), so after an afternoon of swimming we’ll come home and BBQ with extended family.  The last few times we’ve grilled it’s been chicken, so today we’re doing steak with corn on the cob, watermelon, a Caprese salad, and peach pie with vanilla ice cream.  For the steaks we’re using a homemade wet rub from one of our favorite cooking blogs (Our Best Bites).  Wet rubs are great for days like today, because you can whip it up last minute after a long day swimming. This rub includes, herbs, chilies, and lime juice and the recipe can be found here.  I’ll let you know how it goes later…

    Well dinner was a success again tonight. We didn’t home until after our normal dinner time, so the kids were starving and cranky. Rather than grill their hot dogs (the kids aren’t fans of steak) we cooked their portion of the meal inside and got some food into their bellies ASAP. It worked like a charm too as they were all in much better spirits after finishing.

    The lime-chili wet rub was delicious. One thing I will caution is the recipe makes enough to use on 1 to 2 lbs of steak. I used it on 2 lbs, as my wife is from the “less is more” school of thought when it comes to strong flavors. She thought it was the perfect amount of flavor and I while enjoying the flavor thought more would have been better. All in all a great summer grilling experience.
