With high gas prices, it immediately saves you money if you find opportunities to walk throughout your day instead of driving, but there are some less obvious cash saving benefits to walking.  First of all, by walking to do your errands around town you save your car the wear and tear of all that stop and go driving and possibly the need to pay for parking depending on where you live.  Also walking is a great free way to exercise minimizing your need for a treadmill or gym membership and being more healthy always saves you money in the long run.  Lastly, if you walk to and from work it will give you time to think and unwind from the daily grind lowering the stress level not only for you, but your family as well.  Depending on where you live, work, or shop you may have to be creative, but finding ways to walk instead of drive will always save you money and help you feel better.</p>

<p>Twice a year for the past five years I have had to make a tough decision.  Should I volunteer to be the soccer coach for my daughter&#8217;s rec league soccer team? Every time I&#8217;ve elected to not volunteer.  Now those who know me understand that I love spending time with my kids and working with other kids, so that&#8217;s not the issue.  What it&#8217;s always come down to is having too much to do and a lack of spare time for extra activities.</p>
<p>Here&#8217;s the strange thing though.  Although I&#8217;ve never volunteered to be the head coach for my daughter&#8217;s team, the parks and recreation department has sent me the roster and assigned me to the position almost every season since my daughter started playing.  I&#8217;ve always accepted the offer, but not without a bit of grumbling to my wife about it.</p>
<p>Now several years and teams later I won&#8217;t claim to be the greatest girls soccer coach ever and I won&#8217;t say that the practices and games haven&#8217;t added to our family&#8217;s stress level over the past few years, but when I walk through my kid&#8217;s elementary school and have girls from the team run up and give me five or call out &#8220;hey coach,&#8221; I start to recognize that the sacrifice is worth it.  I can assure you that by volunteering my time I&#8217;ve grown closer to my daughter, feel better about myself, and have learned a valuable lesson about sacrificing a little to gain a lot.</p>

So I starting the opening of pantry doors and refrigerator and decided to try a new creation that blends my chicken pot pie with Kevin&#8217;s beef pie. Like yesterday&#8217;s meal, this is nothing fancy,  but all of the ingredients are on hand&#8211;and not having to go to our corner market at this time of day means a lot.  I saw <a href="http://www.foodnetwork.com/recipes/the-cookworks/chicken-pot-pie-with-mashed-potatoes-recipe/index.html">a similar conception</a> on the Food Network website for those of you looking for something more gourmet.</p>
<p>Chicken Pot Pie with Mashed Potato Topping</p>
<p>1 frozen pie shell</p>
<p>1 can of cooked chicken, drained</p>
<p>1 can of cream of chicken soup</p>
<p>1 can of mixed vegetables, drained</p>
<p>1 package of instant mashed potatoes</p>
<p>1/2 cup of shredded cheddar cheese for garnish (optional)</p>
<p>Preheat oven to 400 degrees and bake shell for about 10 minutes or until starting to turn golden. Meanwhile, mix the chicken, soup, and vegetables in a medium pot until heated through and salt and pepper to taste. Prepare the mashed potatoes according to package directions. Take out par baked shell, fill with mixture, and top with mashed potatoes [Aside: My mother has never made instant mashed potatoes. My husband, on the other hand, ate these frequently in his bachelor days. Evidently he would open the package, empty some into his mouth, add a bit of water, swish it around, and call it a meal. . . . Let's just say that his tastes have evolved.].  The aforementioned husband just persuaded me to scatter some cheese over the concoction, arguing that a little cheese never hurt a recipe, so I complied. If you want to add a bit of visual interest, use a little paprika or parsley instead.</p>

Well, the temperature dipped around here and I found myself longing for this simple but satisfying dish. For those looking for a truly authentic cassoulet, this is not the recipe for you. While I fully intend to make a legitimate cassoulet some day, full of duck fat and beans that have been properly soaked, now is not the time. So here is the recipe I currently use, culled from good old Betty Crocker. It isn&#8217;t fancy, but it is good and requires ingredients that are usually on hand. I typically serve this with some kind of crusty bread or biscuits and a salad (today, we had the <a href="http://www.foodnetwork.com/recipes/melissa-darabian/cafe-green-salad-recipe/index.html">Cafe Green Salad</a> that was featured in Ten Dollar Dinners, a new Food Network show that looks promising. It was delicious and I will use it often). We finished the meal off with brownies and ice cream. Everyone left the dinner table happy tonight.</p>
<p>Here is the recipe for the cassoulet. While Betty suggests making this is the oven, I have also made it on the stovetop and in the crockpot.</p>
<p>Easy Cassoulet</p>
<p>1 lb cooked Polish or smoked sausage, cut diagonally into 1 inch pieces<br />
1 can (15 oz) great northern beans, drained, rinsed<br />
1 can (15 oz) dark red kidney beans, drained, rinsed<br />
1 can (15 oz) black beans, drained, rinsed<br />
1 can(15 oz) tomato sauce<br />
3 medium carrots, thinly sliced (1 1/2 cups)<br />
2 small onions, thinly slice, separated into rings<br />
2 cloves garlic, finely chopped<br />
1/2 cup dry red wine or beef broth<br />
2 TB packed brown sugar<br />
2 TB of chopped fresh or 1 1/2 tsp dried thyme leaves</p>
<p>Heat oven to 375. Brown sausage in an ovenproof pot, add all other ingredients, gently stir (don&#8217;t make the beans mushy!). Cover, place in oven, and cook for about an hour, or until mixture is hot and bubbly and carrots are tender.</p>

You can’t bring liquids past security, but you can bring an empty bottle and then fill it up at a drinking fountain as soon as you get past security.  Simple idea that saves you a few bucks every time you fly.</p>

			<content:encoded><![CDATA[<p><img class="alignleft size-full wp-image-563" title="hungarian goulash" src="../wp-content/uploads/2009/08/hungarian-goulash.jpg" alt="hungarian goulash" width="300" height="300" />I’ve always thought that the name of this dish is rather unappetizing–maybe because it’s close to “ghoulish”? But in the interest of saving time and money (see our <a href="../?p=522">recent post on why crock pot cooking is a thrifty choice)</a>, I cracked open the  classic crock pot cookbook, Fix It and Forget It, and found a recipe that matched the ingredients I had on hand. As usual, we were running late for church and I wondered how wise it was to take time to think about dinner when breakfast hadn’t even commenced, but in less than ten minutes, I was able to layer stew meat, sliced onions, and a simple sauce in the pot. Some nine hours later, we enjoyed a lovely meal of goulash over hot buttered noodles, along some steamed zucchini. ( Someone needs to write a book called “101 Things to Cook with Zucchini”. We are running out of ideas of what to do with these garden monstrosities and fast. Please write us if you have a good zucchini recipe!).</p>

With both credit card companies and home equity lines of credit, sometimes these companies are willing to reduce the interest rate.  It can&#8217;t hurt to ask and if they won&#8217;t, then look at transferring your balance to a company that will.</p>

<p>We&#8217;ve had this meal before when a neighbor brought it to us after the birth of one of our children and we&#8217;re excited to give it a try!</p>

Making sure you are drinking plenty of water will provide you great health benefits, but it also has financial benefits too.  Try to drink a big glass of water before every meal, as this will help you digest it better and eat less, saving you pounds and dollars. You’ll also find you feel healthier as you begin to drink adequate amounts of water, and being a healthier person always has long term financial rewards.</p>

<p>I will be up in the mountains helping out with the girls camp for the young women of our church all evening and Heather is still recovering from the bug our family has had the past few days, so we&#8217;re taking the easy out and going to Noodles and Company a fast food chain specializing in, well you probably guessed it, noodles.  Everyone in our family loves this place and while it&#8217;s a little more pricey then your standard fast food, the food is much tastier and better for you.</p>

If so, why not ride together?  You can alternate who drives each day or week and you&#8217;ve instantly cut the wear and tear and gas costs for your car in half, not to mention for your friend.  Even better try and find a few friends to carpool with.  For those of you who live close to the office, try walking or riding a bicycle to work.  This cuts down the local traffic and parking congestion, saves you money and makes you healthier.</p>

Our kids love these, not only because they taste good, but because they get to make their own creation when loading up their plate at the table.</p>
